Pure Pastry's mission is to bake simple, practical and inspiring pastry. We are a unique retail and wholesale bakery that is organic, locally sourced and home grown — a small business dedicated to the integrity of our clients, our pastry, and the footprint we leave on this earth.

Meet Kim

Owner, operator and pastry chef — Kim Gregory is the heart and soul of Pure Pastry.

She was raised in Winthrop and loves her local roots. The North Shore is home, and it shows in everything that leaves this kitchen: Pure Pastry is as unique as Kim herself, in all its naturally organic essence.

With a warm heart and a warm kitchen, Kim bakes handcrafted confections from locally sourced and home-grown ingredients, chasing the most exquisite pastry she knows how to make. She takes particular delight in her creative flair for guests with special dietary needs — the people other bakeries turn away are the ones she most wants to feed.

She is purely dedicated to the integrity of her clientele, and she embraces her staff with that same honor.

Caring for the earth isn't one month a year. It's every decision, every day.

You'll find that commitment right through this bakery — in how we source every ingredient, and in the way we care for the land around us.

Whenever we can, we bake with algae oil in place of traditional oils. It's rich in heart-healthy fats, buttery-clean in flavor, and takes significantly less land and water to produce — a nourishing choice for people and for the planet.

Our home base is a certified-organic property and protected wildlife sanctuary, where native plants, monarch butterflies and countless other species all have a place to thrive. Many of the edible flowers and herbs you'll find on our pastries are grown right here, just steps from the kitchen.

For everything we can't grow ourselves, we partner with local farmers and trusted producers who share our values — including the incredible team at the New Entry Sustainable Farming Project here in Beverly. Supporting local agriculture means fresher ingredients, stronger communities and a healthier environment.

We're proud to be a plastic-free bakery and a member of the Slow Food movement, embracing food that is good, clean and fair.

Ordering

How we take orders.

Everything at Pure Pastry is made to order, in small batches, in an allergen-friendly kitchen. That means every order needs a little notice — here is exactly how much, for every kind of order we take.

Lead times

Special orders5 working days — anything from the Forever Menu or the shop, ordered ahead for pickup
Cakes7 days — every cake in the shop, whole or by the square
Custom orders3 weeks — designed with Kim: birthdays, showers, dessert tables, anything off-menu
Weddings2–6 months — tastings, design, and a dessert plan for the day
Need it sooner? Cakes and custom orders can be rushed into 5–6 days when the kitchen has room, at +30%. Ask when you order — a rush is confirmed by Kim, never automatic.

What counts as a working day

Working days are the days the bakeshop bakes: Tuesday through Friday. Weekends and Mondays don't count toward a lead time — we're out at the markets, or the ovens are off.

So an order placed on a Wednesday is ready the following Wednesday at the earliest. If that day lands somewhere we're closed, pickup rolls to the next day we're open — the calendar on every order does this for you, and won't let you choose a date that's too soon.

Every lead time here is a minimum, and a cake is never ready sooner than a plain treat. Whatever you're ordering, the calendar shows the real earliest date — trust that over the arithmetic.

How to place each kind of order

  1. A special order from the menu.
    Add it to your cart in the shop, choose a pickup date at least 5 working days out, and pay securely at checkout.
  2. A cake.
    The same way, in the shop, with 7 days notice. Cakes can be rushed at +30%, settled at pickup.
  3. A custom order or a wedding.
    Start an inquiry instead. Tell us the occasion, the date and any allergies; the team replies within 1–2 business days with ideas, flavors and a quote. An inquiry is not a booking — it does not reserve your date or shorten a lead time until Kim confirms it.
Allergies come first. Tell us every restriction when you order, not after — allergen-friendly baking is scheduled into the run, and it is the reason these lead times exist.

If it is on the menu and you want more of it, that is a special order. If it needs to be designed — a flavor we don't list, a shape, a tier, a table of desserts — that is a custom order.

How far ahead should I order?
Special orders need 5 working days, cakes 7 days, custom orders 3 weeks, and weddings 2–6 months. An inquiry does not reserve a date or override these lead times — Kim confirms availability and pricing before an order is booked.
Do you deliver or ship?
Pickup at the bakery is standard, local North Shore delivery can be arranged, and we can mail most of our pastries — ask when you order and we'll tell you what travels well.
Dietary & allergens
Do you really do gluten-free and vegan?
It's our specialty — gluten-free, vegan, dairy-free, egg-free, soy-free, sesame-free, coconut-free, peanut-free, tree-nut-free, corn-free and refined-sugar-free options. Note: everything is baked in a kitchen that also uses wheat, dairy, eggs, peanuts, coconut, sesame, corn and tree nuts.
Where do your ingredients come from?
Our own certified-organic property (including the edible flowers), local farms and makers we know by name, and partners like the New Entry Sustainable Farming Project in Beverly. We use algae oil in place of traditional oils wherever possible.

Can I taste before I book a wedding cake?
Yes — tastings are by appointment at the bakery. Start an inquiry to set one up.
How far ahead should I book a custom cake?
Custom celebration cakes: 2–3 weeks is ideal. Weddings: 2–6 months, especially May–October. Start with the custom order page and the team will confirm your date.
Wholesale & stockists
How does wholesale work?
We supply cafés, farm stands, caterers and specialty shops with standing weekly orders, seasonal ranges, and allergen-friendly lines. Send a wholesale inquiry above and the team will follow up with the current line sheet.
Can I buy Pure Pastry near me without visiting Beverly?
Very possibly — we're stocked at farm stands, cafés and shops across the North Shore (locations here) and at farmers markets all season (see the circuit).
